Sweet Potato & Carrot Soup

I created this soup with "about to expire" items in my kitchen. Soups are great for this. You can pretty much add salt, garlic, onions, and turmeric to every combination and it comes out delish! So, I grabbed these ingredients for a nutrient dense meal for my toddler. Bonus, this soup is always a yummy meal to make for the family. See below for benefits of this soup. Here is how easy it is.


Ingredients:


1 Large Sweet Potato

1 Bag of Carrots

1 TSP Garlic Powder

2 TSP Ground Flax Seeds

3 TSP Olive Oli

3 TSP Salt

Pinch of Ground Pepper

2 Cups of Water


First you want to peel the skin off the potato. Cut off the ends. Cut the sweet potato into rounds. Add them to a soup pot and add all of the other ingredients. If the carrots are whole, cut them into rounds too. Let it boil on Medium heat until soft.


There are three ways you can do this next step. 1) use a food processor. 2) use a hand blender 3) use a blender. Once the veggies are soft, dump them into the appliance of your choice and spin until it's at a consistency you think your toddler will like.

Sweet potatoes are super nutritious. Thy are packed with Vitamin A, C, B6, Manganese, Potassium and more. They are rich in antioxidants that protect your body from free radicals.


The fiber and antioxidants in sweet potatoes are advantageous to gut health. Test-tube studies have found that antioxidants in purple sweet potatoes promote the growth of healthy gut bacteria, including certain Bifidobacterium and Lactobacillus species.


Sweet potatoes are incredibly rich in beta-carotene, the antioxidant responsible for the vegetable’s bright orange color. They have also been linked to helping to fight certain types of cancer.


Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants (1Trusted Source). They also have a number of health benefits. They’re a weight-loss-friendly food and have been linked to lower cholesterol levels and improved eye health.


In a nutshell, this soup is packed full of Vitamin A, C, B6, Biotin, K1, Omega-3 Fatty Acids, and Potassium. It helps with inflammation & protects the liming of the GI tract among other benefits.
