My 1 year old daughter LOVES sweet potatoes. But I started to notice that after a couple of weeks with having yams every day, she started to turn away, so I had to get creative. I came up with these awesome and easy sweet potato pancakes and she goes crazy for them.
Ingredients:
Organic sweet potato (1)
Eggs (2)
Dash of cinnamon
Recipe:
Use a potato peeler and peel off the skin of the potato. Wash it and wrap it in aluminum foil. Put the potato in the over for 45 minutes, or until soft, at 450 degrees.
Once the potato is done, place it into a food processor with eggs and cinnamon and blend until smooth.
Heat a non-stick pan with olive oil and scoop out small dollops, about 3 inches big. Cook on each side for 2-3 minutes or until brown. I like to make them a little bit crispy.
Let them cool down and them serve. I also cut them into little pieces so she can eat them herself, adding to the fun of this new meal.
