I have been cooking a lot since I've been working from home over the last several months. I've experimented with recipes from across the globe and this one is from the Middle East. Falafel Pitas with a homemade sauce. It's super simple, plant-based, and flavor-packed.
Ingredients:
Falafel Mix. I like the brand Knorr.
Pita Bread
Dill Pickles
Banana Peppers
Roasted Red Peppers
Sauce:
Plain Greek Yogurt (I use a coconut milk one)
Olive Oil
Lemon Juice
Lime Juice
Garlic Powder (or fresh garlic)
White Wine Vinegar
Cumin
All you do is make the falafel mix into 1 inch balls and cook in vegetable oil for 2 minutes. Place on a paper towel and let it dry. I actually like to keep the mix loose because it's just easier to put into the pita bread.
Cut the pickles and peppers into small pieces.
Then, put the sauce into the pita followed by the falafel, peppers, and pickles. Top if off with more sauce and voila!
