These little healthy egg muffins are a staple in our house. They are easy, versatile and delicious. You can add whatever you like but the baseline ingredients stay the same.
Ingredients:
ten large eggs
1 cup of spinach
1/4 cup shredded mozzarella cheese
1/4 cup fresh asiago or parmesan cheese
Salt and pepper to taste
Onion and garlic powder to taste
Dash of cayenne pepper
Instructions
Preheat oven to 350 degrees F.
Add all ingredients to a food processor and mix well.
Pour contents into a silicone muffin pan.
Bake for 20-25 minutes.
Place on a cooling rack until warm.
Enjoy!
Storage
Store these in a sealed glass container and put them in the fridge.
