Egg Muffins

These little healthy egg muffins are a staple in our house. They are easy, versatile and delicious. You can add whatever you like but the baseline ingredients stay the same.


Ingredients:


  • ten large eggs

  • 1 cup of spinach

  • 1/4 cup shredded mozzarella cheese

  • 1/4 cup fresh asiago or parmesan cheese

  • Salt and pepper to taste

  • Onion and garlic powder to taste

  • Dash of cayenne pepper


Instructions


  1. Preheat oven to 350 degrees F.

  2. Add all ingredients to a food processor and mix well.

  3. Pour contents into a silicone muffin pan.

  4. Bake for 20-25 minutes.

  5. Place on a cooling rack until warm.

  6. Enjoy!


Storage


Store these in a sealed glass container and put them in the fridge.
