Chic Pea Protein Salad

If you're looking for a veggie-packed, high-protein salad, you've come to the right place.



Ingredients:


  • 1 can chic peas (Garbanzo beans)

  • 1 cup edamame

  • 1 cup tomatoes (diced)

  • 1/2 onion (red or sweet)

  • 1 TBSP sunflower or pumpkin seeds


Dressing Ingredients:

  • 1 cup nonfat Greek yogurt

  • fresh dill

  • 1/2 lemon (juiced)

  • salt and pepper to taste

  • 1 tsp olive oil

  • dash of oregano


Chop all veggies, mix all dressing ingredients and enjoy!
