Cheezy Zucchini Fritters for Picky Eaters

Fritters of all kinds have become a staple in my house. They are so versatile you can literally turn anything into a fritter. The OG for us is this delicious zucchini fritter recipe. They are so easy and you can add salt and pepper to taste to these 5 main ingredients:


🥒Zucchini

🧀Cheddar cheese

🍞Panko breadcrumbs

🥚2 eggs

🧅Sweet Onion


Instructions:

Shred the zucchini as fine as you can on a cheese grater. This will give your fritters a nice, smooth consistency. I choose to peel the skin off the zucchini first, but that is optional.


Use a cheesecloth to get out as much juice as possible. You can use your hands or a thick paper towel too.


Shred the onion on a cheese grater. I like to use the smallest holes for a smooth consistency. Another option is to dice them finely.


Put all ingredients into a food processor and mix well. You can do it by hand too. Just make sure it’s all mixed well.


Scoop batter with a small ice cream scoop onto a greased cookie sheet and bake for 20-25 minutes at 400 degrees.


Let cool on a cooling rack. I like the tired ones because I tend to make a lot.







Full Ingredients List:

  • 1 ½ cups shredded zucchini, packed (about 2 small, or 1.5 medium zucchini)

  • ⅓ cup panko breadcrumbs

  • 1 egg

  • ½ cup shredded cheese

  • ¼ cup onions, finely diced

  • ¼ tsp garlic powder

  • ¼ tsp salt (optional)

  • ¼ tsp pepper (optional)
