I'm always looking for a way to get veggies and fruits into my toddler's little body. When I found this healthy, easy (and delicious) carrot and date donut recipe, I was so eager to try it. They are naturally sweetened, veggie packed and great for self-feeding. I like to try new ingredients each time I make them because they always turn out even better than I expected. I make these for my son who is a picky eater and he really enjoys them.
Ingredients:
1 cup oats (I use quick oats)
1 cup flour (I use almond flour)
1 tsp baking power
1/2 tsp baking soda
2 tsp ground cinnamon
1 cup chopped dates
1 cup finely shredded carrots (you can use zucchini or squash)
1/4 cup shredded coconut flakes
1 large egg beaten
1 cup milk
2 tsp vanilla extract
2 tsp maple syrup
1/4 cup of olive oil
Instructions:
In a large mixing bowl, combine the dry ingredients. If you're making this for a young kiddo, use a food processor to make everything very fine.
Add in dates and coat with the flour until they are well coated. Break up any clumps.
Repeat the same with the carrots (or whatever veggie you use) and coconut flakes . Make sure there are no clumps.
In a separate bowl, beat the egg with milk, oil and vanilla together and pour into the dry mixture and combine very well.
Spoon out into a greased or non-stick donut pan
Bake at 400 degrees for 20 minutes.
